人間にとって「食べる」という行為が、単なる栄養摂取を超えた意味を持っていることは明らかです。ではその「意味」とはどのようなものなのか？これを、特に近代フランスを事例として探求することが、私の研究テーマです。具体的には、今につながるようなフランスの「美食」がいかに成立してきたかを、歴史的・思想的文脈に照らして考察したり、またそのようにして進行するいわば「食の制度化」の傍に取り残されてきたものは何かを考えます。研究の主題が「食」という、誰にとっても身近な事柄であるため、ただ文献に向き合うのみならず、自らの実生活のなかにあるごく「当たり前」の食行為のひとつひとつを見つめていく姿勢を大事にしています。
