酢酸菌は、高いエタノール酸化能により効率的に酢酸を生産することから、食酢工業生産に広く用いられています。酢酸の生成は細胞内pHの低下を招きますが、なぜ酢酸菌がこのような極限環境で生命活動を維持できているのかは不明な点が多いです。微生物は温度、浸透圧、pHなどの種々のストレスにさらされますが、pH変化に対する応答機構に関する知見は限られており、酢酸菌はpHストレス応答を調べる上でのモデル微生物になると考えました。そこで現在は、酢酸菌が持つ転写因子や分子シャペロニンに着目し、それらの生化学的な機能解析を通じて、本菌の酸性環境適応機構を明らかにしたいと考えています。また、得られた知見を応用することで、実社会で活用できる技術開発を推し進めていきたいと考えています。
