地球上には、多様な環境に様々な微生物が生育している。90℃を超える温度を好んで生育する微生物を超好熱菌というが、その多くは温泉や、海底熱水鉱床など原始地球を思わせる環境に生育し、原始生命に最も近い現存生物として注目されている。超好熱菌の中でもArchaeaの分類ドメインに属するものは形態的には原核生物であるが、分子系統的に真核生物に近縁であり、真核細胞誕生の謎を探る上でも興味深い。しかも超好熱菌の生産する酵素は100℃を越える温度でも変性しない耐熱性酵素であり、産業上の用途が広い。私は超好熱菌の分子育種に取り組みつつ、耐熱性酵素の有効利用法を開発していきたいと思っている。遺伝子操作を駆使して酵素の機能改変を行いつつ、一方で有機溶媒などの疎水系で耐熱性酵素を機能させることで従来にない酵素反応場の実現を目指したい。また、新規有用微生物の探索や微生物を用いた環境浄化にも取り組み、微生物を利用したバイオテクノロジーを展開して行きたいと考えている。また、日本は発酵食品の宝庫である。発酵食品にはポリアミンなど健康に関係する物質が多く含まれる。麹菌、納豆菌、酢酸菌を中心に発酵食品に関与する微生物の機能を高め、食べ物から健康に貢献したいと考えている。
